Today's Mezcal review is Mezcalogia Jabali produced by Jose Parada. This comes from quite a limited run, 50 bottles total, and was produced in 2015. Let's get to it.
Bright, fruity, loaded with character. Berries, honey, cotton candy, hint of pepper. Faint whisp of varnish, cantaloupe, melon, cream. Rich and sweet, with lots of enticing fruit character.
Rich on the palate, nice body to it, coats the palate well. Distinctly different set of notes though. Some clay, more earthy and savory, though fruits and cotton candy are present as well. Faintly nutty, with some minerality beginning to show with a little time.
Long, rich, elegant finish here. Ash, burning wood, some minerality and varnish. This all pairs magnificently with more fruit, cream and candy. Whew.
Hard not to love this one. This is the full monty, and loaded with complexity, fruits and a fantastic savory component.
