Ignacio Parada, Valentin Cortes
This is a single agave mezcal made from 100% Mexicano. It was distilled at the De Cortes distillery and bottled on site.
Doughy, honey, pepper. Fruity, some ethanol / varnish notes. Bready and earthy.
Medium mouth feel with no immediately apparent smokiness. Sweet honey, bready again, Gouda cheese and pepper. The lactic cheese note is interesting but really nice.
Short, sweet and peppery.
This wasnt half bad either, but lacked a lot of real depth. It did, however, make a very nice cocktail.
