This is a Sotol produced by Bienvenido Fernandez, in a 35L batch, from a combination of Churique and Wheeleri. Distilled on copper after fermenting with wild yeast, this should present no shortage of flavor. Lets get to it.
Super savory, loaded with minerality and a ton of fruit. Salty, savory, mineral forward, hint of lime and salt. Smells like a funky and powerful gose, in the best way. Whew.
Sweet, lots of plastic, smoke, lime, curd and sweetness, cream cheese, faint ash and a really soapy note that pairs so well with the fruit and sweets. Minerality is powerful here.
Long finish, rich with smoke, ash, chemicals, minerality, wood and some lime. Powerful but interesting.
